Panay on a Plate: Belmont Hotel Manila’s Pamana Features Traditional Visayan Dishes

For Chef Dan Jason Acido, Belmont Hotel Manila’s Executive Chef, cooking is more than just about the taste — it’s also about preserving culture and tradition. And so this December, the hotel unveils its third Pamana collaboration, a special weekend buffet at Café Belmont celebrating Filipino culinary heritage, featuring authentic dishes from Panay Island in the Visayan Region.

Pamana reflects the hotel’s commitment to cultural preservation and sustainable dining experience by highlighting different regional dishes every quarter. In this latest collaboration, the spotlight features the flavours of Panay Island, with a special focus on Ilonggo cuisine, prepared by the Executive Chef of Belmont Hotel Manila, Chef Dan Jason Acido, and guest chef, Chef Rey Parreño II.

Some of the dishes in the current line-up include:

  • Bordon Mechado: a slow-cooked beef dish rich in heritage flavors
  • Piangang Manok: a traditional Mindanaoan chicken dish infused with burnt coconut and spices
  • Inadobadong Apahap: a refined take on the classic adobo featuring locally sourced Asian sea bass

These dishes are cooked using locally sourced ingredients, such as labo, bulaklak ng luya, and bignay.

“These dishes represent different regions, memories, and cooking traditions from across the Philippines,saidChef Rey Parreño II. “By sharing bordon mechado, piangang manok, and inadobadong apahap, we hope to honor the people and stories behind these recipes and keep them alive for the next generation.

“Pamana is more than a dining experience for us. It is our way of honoring Filipino food heritage by celebrating heirloom recipes, regional flavors, and the stories that have been passed down through generations,” said Mayann Malapote, Hotel Manager of Belmont Hotel Manila. “Through initiatives like this, we hope to create moments that bring people together and deepen appreciation for our culture.

Reservations

These dishes are available through the Pamana Weekend Dinner Buffet at Café Belmont starting December 15, 2025. The buffet is available every Friday and Saturday, from 6:30 PM to 9:30 PM, for P1,700 per person. The lively buffet is perfect for families, groups, or solo diners looking to indulge.
